5 gallons cran/grape juice 2.5c sugar per gallon yeast, yeast nutrient if you feel like it

ferment, wait, rack and add K-sorbate, wait...

rack again, sweeten, bottle. About 1c sugar per gallon for a decent semi-dry wine. Maybe a little on the sweeter side.
